So, this was us this morning...with the big blob of unfolded laundry on my dining room table that I STILL haven't gotten to!
Since my husband had his spinal tap on Friday...again, yes...I said SPINAL TAP! Things didn't go as planned. He had to spend a required 24 hours laying down and then he should have been able to go back to normal after that...WELL he's had a headache ever since so I haven't wanted to leave him just in case something (God forbid) happened. Today the doctor told him to remain laying down and that if he still has a headache tomorrow he'll have to go back in and have another procedure done to stop the headaches (don't want to get into detail...kind of gross what they have to do) SSOOOO we've been a little cooped up in the house.
The kids don't get to see him much at all during the week and when he's home he's usually super high energy and goes a little crazy with them...so I had to literally try and fend them off from trying to tackle him and from waking him while he slept. He's missed us so much during the week that he stayed out on the couch so he could be near us. Seriously, the best EVER.
BUT that means that I really didn't get much done around the house! I planned on filming this cool tutorial to make a plain tank top look freaking awesome with pictures and everything...so that went out the door...maybe tomorrow or the next day for that...
SSOOO I said to myself...what the hell am I going to post about?? I have a HUMUNGOUS list of shit that I could write about, but with all of the other unfinished business around the house and the kids going stir crazy I couldn't focus...I even forgot that I had to make dinner...
F*ck!!! What the shit am I going to make for dinner??!!!
I have been going back and forth between the kitchen and the living room and the playroom all day and just seem to keep moving things around without putting them away because someone, somewhere was always calling my name and asking for something...I DID get out to go to the gym because I started to become "sweary crazy yelling mommy" but then that little momcation was cut short because Gunnar couldn't find his "mommy brachiosaurus" dinosaur toy...Holy crap the world is going to end...and since my hubbs couldn't really stand up for long I had to rush home for the damned dino...
PS..(KITCHEN AND DINING ROOM STILL NOT CLEAN...Don't even want to get onto the subject of the playroom war zone). And it got a WHOLE LOT worse before it got better...
oh, look...a pizza box...with literally NO pizza in it...and why is it still there you ask? Because I went to throw the damn thing out a million times BUT my name was called a million and ONE times by my kids so the kids won...every, damn. time...
OK...SO BACK TO DINNER!!!!
I have had a zucchini staring at me from my kitchen counter for a few days and if I tried to feed it to Arya as a side she'd just look at me like "yeah, ok, Bitch" and then say "no" with a shit-eating grin on her face. So I didn't want to even get to that point because I just might have lost it. SOOOOO...I figured that since I know how make delicious zucchini bread I can definitely make delicious pancakes with zucchini in them that she'll eat...and THANK GOD, Arya, Gunnar AND Sean all ate the shit outta them...Seriously made my weekend...like for real...
Well, that's a freaking WIN in my book! Tasty and pretty AND easy! (sorry...they're not low carb, gluten free or paleo BUT they are high protein! Remember, I was in a rush because I almost forgot to feed my own children...)
Here it is: You'll need a medium sized zucchini, pancake mix (I used Kodiak Cakes mix), 1/2 tsp - 1 tsp cinnamon, 1 tsp vanilla extract, a grater and a hand blender.
1. Grate the entire zucchini and squeeze as much water out as possible. You can use cheesecloth or something like that.
2. Follow the directions for the pancakes and then add in the strained zucchini, cinnamon and vanilla extract.
3. Use the hand blender to blend all ingredients together (otherwise the pancakes will have strings of zucchini in them). If you have to add a little more water or a little more pancake mix for the right consistency then do so. The consistency should be like a thicker soup.
4. Use a LITTLE bit of butter or ghee (which has a higher smoke point than butter) to coat the bottom of a non-stick pan...some good pans don't even need it. Then pour pancakes to desired size. Flip them once bubbles start to form.
** I made a bunch of them and the extras I put on a pan lined with parchment in the freezer. once frozen I put them in a ziplock bag and kept in the freezer till needed. (Tomorrow)
